Snow Peach Cobbler and Bannana Bread

I have been so busy lately! I realized I haven't been keeping up with my recipe posting! So here are two that I bake often. They are quick and delicious! Unfortunately, we ate them up before I remembered to take picutres :[ Enjoy!

Snow Peach Cobbler:
I bought a bag of snow peaches from the market the other day. I forgot how much my mouth detests peach fuzz and was avoiding them. I never waste food though so tonight I got up and threw together a cobbler. Now the peaches have conveniently transformed into gooey, sugary goodness topped with a buttery crust. Perfect.
This cobbler is so simple, really! Takes at most 15 minutes to put together and 30 to bake. Dessert in under an hour!

INGREDIENTS:
1/2 cup unsalted butter
1 cup all-purpose flour
2 cups sugar, separated
1 tbsp. baking powder
1/4 tsp. kosher salt
1 cup milk
4-5 fresh peaches (i used snow peaches. yellow peaches are more common)
1 tbsp. fresh lemon juice
1/4 tsp. cinnamon
1/8 tsp. nutmeg


Preheat your oven to 375. 
Place the butter in a glass baking dish and melt it in the oven.
Combine flour, 1c sugar, baking powder, salt and milk. Stir until combined. 
Pour the batter over the melted butter. Do not stir.
Place the peaches, 1c sugar, lemon juice and spices in a saucepan over medium heat, stirring often. When the sugar is completely melted and well mixed pour it over the batter in the pan.
Don't worry the batter will rise while baking to form the crust over the peaches!
Bake for 40-45 mins. The crust should be an even golden brown.
Let cool slightly before serving. 
This cobbler goes great with ice cream. Yum!

Bananas Bread:
My fiance's mom always gives us bananas. However, they are another fruit I do not really care for. But, I do love them in desserts! Keeping with the theme of not wasting, I wait until the bananas are starting to brown and then I mash them up and make Banana Bread! It is really an easy bread to make!


Ingredients:
3-4 overly ripe bananas
1/3c butter (melted)
1c sugar
1 egg (slightly beaten)
1tsp vanilla extract
Pinch of salt
1tsp baking soda
1tsp each nutmeg and cinnamon
11/2c of all purpose flour





Preheat your oven to 350.
Smash bananas in a large bowl and add the melted butter. Mix in.
Mix in sugar, egg and vanilla. Stir until combined.
Sprinkle the baking soda and salt over mixture and stir.
Add the flour. Mix well.
Pour the batter into two small loaf pans. (or use one large pan)
Bake for 1 hour or until a toothpick inserted in center comes out mostly clean.


Sometimes I like to cover the bread halfway through baking to make sure the top does not get overly brown. I do not like crispy bread!
This bread has always been a favorite of my family and I love to give it as gifts!
