Tomorrow is Mother's Day! :] Time to show our moms we love them and appreciate everything they do for us!
I made my fiance's mom a wonderful cake to celebrate. White cake with a strawberry cream filling and marshmallow fondant is perfect for a light yet sweet treat!
I used a basic white cake mix to fill one 8'x4' cake pan. I cut the cake round in half width wise to make a double layer cake without having to increase the size.
The strawberry cream filling is simple and one of my favorites for white and yellow cakes.

Here's What You Do:

1 C diced fresh strawberries
1 C heavy whipping cream
1/3 casting sugar
1 Tsp vanilla extract

Mix together the cream, sugar and vanilla. Beat the mixture until it begins to form stiff peaks.
Usually take about 4 mins.
Remember that over whipping the cream will cause it to curdle.
Now fold in the diced strawberries.

I let the cake cool completely before I sliced it. Then spread the entire amount of filling on the cake. After placing the two halves together I covered the entire cake with butter cream frosting. This is necessary to make the fondant lay smoothly over the cake.
I made 1lb of marshmallow fondant and colored a quarter of it with lavender fondant coloring. I then rolled out the white fondant and  placed it over the cake. After cutting it to fit I smoothed it gently with an angled spatula. The cake is now ready to decorate! I made the bow and other decorations with the lavender fondant and applied them to the cake.
I love this video on how to make fondant bows. This guy makes it look so easy! When I have more time I use regular fondant which is a little less sticky and makes bows and other things easier to mold, which is what he is using in this video.
